Peter coenenChef Coenen’s uncommon path into the culinary scene began at a boarding school outside of Boston where both of his parents were teachers and most meals consisted of cafeteria-style food. He soon attended Johnson & Wales University where he received a Culinary Arts degree.
After working at a number of Forbes Five Star restaurants and properties, as well a AAA Five Diamond property, Coenen soon moved to the Windy City, where he continued to hone his culinary skills. Beginning in 2010 at one Michelin-starred restaurant, Boka, he then moved on as Executive Chef of The Gage Restaurant, and after to the Chicago Athletic Association Hotel as the company’s Corporate Executive Chef. This is where he oversaw operation of the hotels four food and beverage offerings, two freestanding restaurants, as well as the concept design and creation of the James Beard Award-winning Cherry Circle Room. To top it all off, in 2018 Coenen, was not only named “Rising Star Chef” by StarChefs for his renowned flavors and creativity, but he also received a Michelin Bib Gourmand for his efforts at Lonesome Rose.
Inspired by worldwide tastes, Executive Chef Coenen brings his combined love of seafood and luscious modern flavors to Pacific Hideaway and Kimpton Shorebreak Resort. Continuing to utilize premium seasonal and locally sourced ingredients, while delivering dishes that are bursting with flavors one would find while surfing at Surin Beach or Playa Naranjo.
